Raw Nut Butter Bars - The Best No-Bake Bars You'll Ever Eat

You don't have to give up on your favorite chocolate desserts and snacks when you eat clean. By removing refined, ultra processed ingredients and substituting them for raw, unrefined and wholesome counterparts, you'll add a whole new dimension of nutrition and taste to all your dessert recipes. These may be the best No-Bake nut butter bars you'll ever eat.

To keep these on the low-sugar side of things, use natural sugar-free organic nut butter and organic dark chocolate both preferably without any artificial emulsifiers. If you have a high-speed blender like a Vitamix or Blendtec, you can even make your own nut butters.

The Best No-Bake Bars You'll Ever Eat
1 cup organic raw nut butter (i.e. peanut, cashew, hazelnut)
1/2 cup raw honey
1/2 cup unrefined coconut oil (be sure to use unrefined for the coconut flavor)
2 cups dry oats (not instant)
1 cup shredded coconut
1/2 cup chopped walnuts (optional)
1 1/4 cups organic dark chocolate chips
1 tsp vanilla extract

Melt peanut butter, honey and coconut oil over low heat (low heat on most stove tops is between 110F-120F). Once melted, remove from heat and add oats, shredded coconut, chocolate chips and vanilla. Stir until chocolate is entirely melted. Pour into a 9x13 pan and cool in the fridge. When it's set, cut into bars and enjoy. Store in the fridge. If they last that long!
