There are way too many people out there who haven't experienced the excitement of raw food. Many feel it is boring or tasteless. It's anything but. This is a wonderful recipe for any skill level for those interested in trying raw food dishes. Toss this pumpkin seed pesto with your favorite veggie and I dare you to tell me it's tasteless.
2 cups of your favorite veggie chopped in thin slices (cucumbers, zucchini, carrots and peppers work best)
1 cup of pumpkin seeds (pepitas), soaked for 2 hours then drained
1/2 cup olive oil
2 garlic cloves
1/2 tsp cayenne pepper
1 tsp. apple cider vinegar
1 tsp. raw honey
1 cup fresh basil leaves
1 tsp. sea salt
Chop veggies in 2" or 3" lengths.
Put the remaining ingredients into a food processor and process until very smooth. If you like it chunky reduce reduce processing time.
