Raw Veggie Pumpkin Pesto Recipe


There are way too many people out there who haven't experienced the excitement of raw food. Many feel it is boring or tasteless. It's anything but. This is a wonderful recipe for any skill level for those interested in trying raw food dishes. Toss this pumpkin seed pesto with your favorite veggie and I dare you to tell me it's tasteless.


Ingredients:

  • 2 cups of your favorite veggie chopped in thin slices (cucumbers, zucchini, carrots and peppers work best)
  • 1 cup of pumpkin seeds (pepitas), soaked for 2 hours then drained
  • 1/2 cup olive oil
  • 2 garlic cloves
  • 1/2 tsp cayenne pepper
  • 1 tsp. apple cider vinegar
  • 1 tsp. raw honey
  • 1 cup fresh basil leaves
  • 1 tsp. sea salt


Instructions

  1. Chop veggies in 2" or 3" lengths.
  2. Put the remaining ingredients into a food processor and process until very smooth. If you like it chunky reduce reduce processing time.
  3. Mix and enjoy
